there are many question i am thinking of relating to this particular paragraph.
1. what kind of fire is it, from which it is told back that they were getting warmth from it, but still it didnt hurt her as she easily SCOOPED it and put it in a little jar.
2. it is said that snape did realise he was on fire but then why is the conflict at the end of para?
3. wasnt he surprised that one minute before he was on fire then nothing is there?
4. hasnt he noticed that Hermoine passed her at that very instant?

There are a couple of threads about this particular fire, including all about when, where, why Hermione has this particular ability to make the fire, what it could mean, etc. Also, there is another thread discussing the specifics of Snape's distraction.

However, to answer a couple of your questions here - I think that the "charmer" of the fire, in the case, Hermione, would be able to put it back in the jar because she was the one who did the charm. Much as taming a pet or something. Since it is something she created, presumably she knows how to control it as well.

As for him noticing he is on fire and then not seeming to wonder why it stopped - I think that this could be explained a couple ways. First, that he was distracted by what was happening with Harry. He might have just thought it got put out and then his attention directed back at the Quidditch scene. I don't think it's hard for someone to believe that another person would put out a fire on a professor's robes, so he might have thought that someone just "charmed" it away.

As for noticing Hermione, it was my understanding that she was under the seat, so Snape would not have noticed her as she was not visible to him. And then, with the commotion, she could easily have slipped away unnoticed.

She was under the seat in the movie, but what about the book?

I don't think it unreasonable that Snape wouldn't notice the fire with Harry's broom going nuts, but wouldn't he notice another teacher in the box with him starring up at the sky and muttering?

Hermione and fire is a constant part of the books - interesting considering phoenix and flames right ;)

Hermione seems to have an affinity and skill with the fire she creates - I think to the point that she can brand her own - and as said above it is like a fire eater and flames - she knows how to control it and as such she doesnt get hurt.
She didnt want to incinerate Snape - just distract him - so I am sure that the flames she created we controllable by her.
As for taking it back afterwards - perhaps she was worried that Snape might be able to trace back the owner - and I think we can all agree that wouldnt be cool :D
